Why 1764 exists

An American point of view.

Luxury should have a place of origin.

We focus on two native American fish with distinct roe: Shovelnose Sturgeon and Paddlefish. Natural differences in pearl, color and flavor are part of their identity, not something to erase in pursuit of sameness.

The 1764 standard

Only the best gains the 1764 label.

Wild origin gives caviar its story. Exceptional quality earns our name.

We look for intact pearls, a confident texture, balanced salinity and a clean finish. Those qualities should feel complete in the spoon—not like boxes checked on a list.

Direct sourcing

We know who caught it.

Our fishing partners in the Central Midwest bring more than 20 years of experience to the waters, season and handling behind our caviar.

We work directly with fishermen rather than buying anonymous distributor inventory. Harvest follows applicable fishery rules and reporting requirements; roe is processed and packed under applicable handling and food-safety requirements. That knowledge and accountability stay close to the product.

Traceability

Origin should never be vague.

Wild harvest operates through applicable seasons, permits, limits and reporting requirements. Species, origin, legality and careful handling belong at the center of the luxury story.
