We sell wild-caught American Paddlefish and Hackleback. We work directly with the fishermen who catch it.

Why wild

We do not sell farmed caviar.

Farmed fish are raised in controlled water and fed a formulated diet. The goal is consistency: similar conditions, similar roe.

Our fish live and feed in American waters. Paddlefish filter zooplankton. Hackleback eat insects, worms, mollusks and small crustaceans. The fish, water, diet and season all affect the eggs.

You can see the difference in the tin. Wild roe is not uniform. One catch may be darker. Another may have slightly larger pearls or a stronger buttery finish. We choose each lot on its own merits instead of trying to make every batch taste the same.

How we judge it

We still judge every lot.

Wild-caught tells you where it came from. It does not tell you whether the caviar is good.

Pearls
Intact and distinct. Not crushed or sitting in excess liquid.
Texture
Firm enough to separate cleanly and pop under light pressure.
Flavor
Clean salinity. Earthy and buttery for Paddlefish. Silky and mildly nutty for Hackleback.
Finish
Clean and persistent. Never muddy, metallic or fishy.

Sourcing

We work directly with the fishermen who catch it.

Not through a broker. Not through a distributor. Directly with the fishermen.

That gives us a straight line back to the catch. We know what species we are buying, where it came from and who handled it before it reached us. If a lot does not meet our standard, we do not buy it.

Responsible harvest

Wild harvest is regulated for a reason.

Paddlefish and Hackleback are slow-maturing native fish. Legal seasons, size limits, permits and harvest reporting protect breeding populations and document the catch. We only buy legally harvested caviar from regulated American waters.

The word wild is not enough. The catch has to be legal, documented and traceable.
