Questions

American caviar, clearly explained.

What is Paddlefish caviar?

Roe from American Paddlefish, with fine silver-grey pearls, an earthy depth and a smooth buttery finish.

What is American Sturgeon caviar?

Roe from wild American Shovelnose sturgeon. The pearls are dark and firm, with a silky texture and subtly nutty finish.

How much should I order?

Allow one-quarter ounce per guest for a taste or one-half ounce per guest for a full serving.

How should I store it?

Refrigerate promptly and follow the temperature instructions on the final product label.

How long does it last?

Follow the sealed and opened shelf-life instructions on the product label. Contact us before ordering if the timing is critical.

How is it shipped and when will it arrive?

Available services, charges and estimated timing are shown at checkout for the delivery address.

What spoon should I use?

Use a clean, non-reactive spoon. Mother-of-pearl is traditional because it does not add a metallic taste.

What should I serve with it?

Keep the service simple: crème fraîche, potato, egg, blini or brioche all make room for the caviar.

What does wild-caught mean?

The fish lived and fed in natural waters rather than a farmed environment. Legal wild harvest is managed through applicable permits, seasons, limits and reporting.

What if the package arrives warm or damaged?

Do not serve the product. Photograph the package and contents, keep the packaging and contact 1764 promptly with the order number.
